One More Thing: El Gorrión, or the Sparrow, is our new name for a favourite coffee that is prepared every year for us by Hacienda La Minita. This coffee is collected from a cherry buying station through the harvest season located in the high elevation growing region of Dota in Tarrazú.

Espresso:	20g in/ 53g out/ 20sec.
Filter:	15g coffee/ 250g water/ 2min 25sec.
Breville/Batch:	60g/L or 72g/1.2L
