sugarplum cherry sleigh

There is a new drink in town! We've sent this years Sugarplum Sleigh Edition for a ride over ice. It's giving cherry, and it's giving sleigh. Give it a ride. 

  

What you’ll need:

  • Espresso Machine
  • Cream Charger
  • Glass
  • Ice to Serve

Ingredients:

  • Double Shot of Sugarplum
  • 75mL Oat Milk
  • 8g Lime Juice
  • 150g Coconut Cream
  • 500g Frozen Pitted Cherries
  • 300g White Sugar
  • Maraschino Cherries (garnish)

Method to our madness:

  • Thaw cherries
  • Add white sugar and mashed until fully infused.
  • Add 350ml of water.
  • Place on stove or burner to heat up to 72C. (Don’t push far past this temp because sugars can burn!)
  • Macerate for 15-20 minutes.
  • Strain syrup
  • Add 150g sugar and stir till dissolved.
  • Add Lime juice and coconut cream
  • Chill for 20 minutes or until use.
  • Prep chilled glass with ice
  • Mix a shot of espresso (Sugarplum) with oat milk
  • Pour over ice
  • Add the cherry syrup to a cream charger and create the cherry foam.
  • Top with cherry foam and a cherry (maraschino or fresh!)
