He’s spent his career carving out better, bolder, top-scoring coffees from small producers across Peru. This lot is a standout example of his commitment to quality, with sweet vibrancy in the cup.
CAJAMARCA, PERU
Cajamarca is a semi-dry, semi-cold, tropical highland of Peru with very fertile soil at high Andean mountain elevations. Located in northern Peru near the Ecuadorian border, the region’s mountainous terrain and favourable climate create excellent conditions for specialty coffee.
These conditions allow coffee cherries to mature slowly, developing greater sweetness, complexity, and flavour density. Smallholder producers farm on 2-3 hectares of land, many of which practice organic farming. Most farmers in the area work independently, but the recent increase in cooperatives has been effective in increasing the quality of coffees produced in the area.
